This recipe makes 4 portions. You may adjust the portions (and proportions) to your liking.
– 2 cups of spinach, chopped;
– 1/2 to 1 cup of arugula;
– 1 box of cherry tomatoes, diced;
– 1 medium avocado, diced;
– 1/3 cup of black olives, whole;
– 1/2 cup of feta cheese, crumbled.
For the dressing:
– 1/4 cup olive oil;
– 1/8 cup lemon juice or red wine vinegar;
– 1 tbsp yellow mustard;
– Salt & pepper, to taste.
There are none! Cut up all your ingredients, mix them in a bowl, add the dressing, toss and serve! The whole wheat bread on the side is optional 😊
